Nutritional Comparison: Before: Calories 561 (49% fat), 32g fat Next: Calories 270 (31% fat), 9 g fat You save: 291 calories and 6 grams of saturated fat Ingredients: Cake: Cooking spray 2 cups flour 2 teaspoons baking powder 2 teaspoons cinnamon 1 1 / 2 teaspoons baking soda 1 / 2 teaspoon salt 1 1 / 3 cups sugar 1 / 3 cup vegetable oil 2 / 3 cup nonfat plain yogurt 5 oz free egg substitute 2 cups grated carrots 1 / 4 cup finely chopped walnuts 1 (8-ounce) can pineapple in juice, chopped, undrained Frosting: 2 tablespoons butter 1 / 2 (8 ounces) cream cheese block 1/3-less-fat 1 / 2 teaspoon vanilla 1 1 / 2 cups powdered sugar Directions: 1. Preheat oven to 350 degrees. 2. A coat of 13 – x 9-inch baking pan with cooking spray; aside. Lightly spoon flour into dry measuring cups, level with a knife. 3.
